Does anyone know if you can run a headphone out from an amp into the Line in on a computer, or would that likely/definatly fry my sound card?
Is there a huge power differance between the two?

I think it should work just fine. I did some couple recording with using the same way like that. However, it has a small delay by the time when the comp gets the signal from your guitar.

You wont fry anything. The only difference is the line out has cab simulation while the headphone out doesnt. Normally.
Just don't run a SPEAKER OUT into your computer.
But, running headphone out is probably a better Idea because it's stereo. (Meaning you'll have a left and a right channel.)
