Okay, so looking at the different scale 'shapes' on this site I see that its made plain what strings are played by which fingers. But what I dont understand is what frets you apply the different shapes too..? Is that because you can play any of them at any point on the fret board? Or did I miss some chunk of info? Sorry if this sounds like a dumb question but I really am just having difficulty grasping the concept.

yes you can use the shapes all over the fretboard. all you have to do is know the chord you're soloing over and change the key of the scale to match the chord by moving it up or down the fretboard. the key of the solo determines what frets you play on.

All the patterns have the root note on different strings, so one position will be for the root note on the 6th string and another position will be for the root on the 5th string and so on. Just decide which key you're in and off you go.
