guitar101 used to have tons of backing tracks. Unfortunately, they had to shut it down for legal purposes... :(

If you have a midi editor you can easily create almost any backing track you could want (albeit midi quality).

First go get a good powertab or guitar pro tab of your song. Next, export the midi somewhere on your computer you won't forget. Now, open the midi with your editor/sequencer. Finally, delete or mute the track you do not want to hear. You can leave it at this or save it again to open up with a normal player.

To slow it down or speed it up, just change the tempo. You should also be able to transpose the non-drum tracks if you want to play it in a different key.

If you are looking for actual recording quality tracks, well then this method is pointless. But if you want a great customizable way to learn a song, then I can't think of anything better.
