how often should i change them, how many should i change at a time, what type of string, and why does my guitar buzz when i play the low e string. thanks.

:D opinions differ a lot on all of these questions, from only changing broken strings to changing the whole set every two to three weeks...also the sort of strings depends a lot on what you feel comfortable with, so you try out different ones over the time and see where you get stuck with...
...I would recommend to change always the whole set, especially if you change brand and type of the strings, so you will hear the differences better until you come to your "home-brand"...
...also there is definitely a point, when strings sound dull, but when you're beginning and playing daily, you will easily overhear it, so try and change at least after three month (if you practise daily), because - from my experience - that is the longest lifetime of a string...
...the buzzing e-string??? - could be that the action is too low, like when the nut and bridge are unregular, have a look at those...it could also be that you just hit the e-string to hard, because it's the first one if you do a downstroke and gets the most power...with a little more practise you should be able to equalize that...

Make sure you take your guitar to get the action adjusted, unless you know what your doing.
And you can take all the strings off at the same time if you want,(just make sure you know which ones go where when you put the new ones on)unless you have a floating bridge. If you take off all the strings and pick up the guitar, the bridge will fall out.
