In the key of C, the chord progression is C Major, D minor, E minor, F Major, G Major, A minor, and B diminished. What I would like to know is what would the chord progression be if instead of starting with C Major, you start with C minor? Any help would be greatly appreciated.

I think you mean chord scale not chord progression.
The key of C major is based on the C major scale:
C D E F G A B
the chords are:
I ii iii IV V vi vii
C Dm Em F G Am Bdim
So the chord scale for the key of C minor
would be based on the C minor scale instead
of the C major scale.To get the C minor scale
you flat the 3rd,6th and 7th notes of the C major scale:
C major scale:
1 2 3 4 5 6 7
C D E F G A B
C minor scale:
1 2 b3 4 5 b6 b7
C D Eb F G Ab Bb
So the chords for C minor will be based on the C minor scale:
C minor scale
C D Eb F G Ab Bb
the chords are:
i ii* bIII iv v bVI bVII
Cm Ddim Eb Fm Gm Ab Bb
if you start the Cminor scale on the 3rd
you get the Eb major scale:
Cminor scale
C D Eb F G Ab Bb
Eb F G Ab Bb C D <- Eb major scale
