I find that when I play a song where I'm switching chords quickly, I tend to "short-change" the last strum right before the switch slightly. I start moving my left hand off of the first chord and on to the next a little prematurely so that I can make in time, and to avoid a bad sound, I only strum a few of the strings (like the open notes of the chord) with the right. Is this normal, or should I try harder not to do this? It seems physically impossible to switch in a fraction of a second. It also sounds weird when you strum a full chord, then let go to move onto the next. It sounds choppy, or like a chord pull-off into mush.

Any advice would be greatly appreciated!

That is exactly how you do it. I have very rarely seen this mentioned in books. Most people just figure it out on their own like you did. It is physically impossible to just snap your finger instantaneously from one chord to the next without some kind of transition.
